- Pelamos y picamos la cebolla. En olla o sartén amplia echamos un chorro de aceite y llevamos al fuego y añadimos la cebolla y el jengibre en rodajas. Añadimos sal, removiendo de vez en cuando para que no se tueste la cebolla y se ponga blandita.
- Lavamos los tomates quitamos el pedúnculo y cortamos en trocitos, añadiendo al sofrito de cebolla y jengibre. Dejamos unos 10 minutos y, mientras, escurrimos los garbanzos sobre un colador, lavamos bajo el chorro de agua fría y dejamos escurrir.
- Ponemos el sofrito en un bol alto, en la misma sartén u olla donde hicimos el sofrito ponemos los garbanzos y los tostamos 3 o 4 minutos.
- Al bol le añadimos las 3 cs de leche en polvo, la cucharada sopera de curry y medio vaso de agua y con batidora trituramos todo muy bien, probamos para rectificar de sal a nuestro gusto. Añadimos a los garbanzos, removemos, dejamos un par de minutos al fuego, apagamos y añadimos el arroz reservado y mezclamos. Servimos caliente.
