- Con el pimiento, la cebolla, los ajos y el laurel haremos un sofrito.
Cuando esté, añadiremos el conejo troceado, echando entonces las especias y 1 tomate pelado y cortado. Lo tendremos unos 5 minutos. - Después añadiremos el vasito de vino blanco y el coñac y lo coceremos 25 minutos hasta que el conejo esté tierno.
- En una sartén haremos un sofrito para después hacer un majado. Sofreímos las ñoras y las sacamos, después los ajos enteros sin pelar y los sacamos también. Finalmente, 1 tomate con piel cortado en 4 trozos.
- En un mortero con sal majamos el sofrito anterior y lo reservamos.
- En la paellera echamos el conejo sin la salsa, el aceite sobrante de hacer el sofrito para el majado, la fideuá, los caracoles, los champiñones cortados a láminas y el majado. Sofreímos todo 3 minutos con el fuego flojo para que no se pegue y la fideuá salga un poco frita.
- Cuando la fideuá está suelta y se vaya dorando echamos el caldo del conejo en salsa, el vasito de vino, la cúrcuma, y rectificamos de sal (medir los líquidos tal y como indicamos en ingredientes). Lo dejamos cocer el tiempo que indique la pasta y 5 minutos de reposo.
