- Ponemos las dos yemas y las empezamos a batir. Añadimos la mitad del azúcar y lo integramos bien

- Montamos las claras a punto de nieve, añadiéndoles el resto del azúcar
- Hasta que quede una masa compacta
- Ahora tomamos una cucharada de merengue, la llevamos a la mezcla de yema y mascarpone y con un batidor de varillas, mezclamos enérgicamente
- Cuando esté bien integrado añadimos el resto de las claras y ya las integramos con movimientos envolventes y suaves
- Y montamos el tiramisú: ponemos una base de crema, mojamos ligeramente las gallegas de huevo en el café y las vamos disponiendo en la fuente
- Cubrimos con crema y repetimos la operación
- Coronamos con las Amaretti previamente remojadas en el café y cubrimos con crema. Espolvoreamos con cacao
